Coffee Collective in Carlsberg Byen will stand out from the rest of the shops, featuring takeovers from a variety of renowned international roasteries.

Each day, we will dedicate our shop to a new roastery. Meet Tim Wendelboe, Monogram Coffee, and more, and participate in tastings hosted by the talented people behind these names. The entire menu will change from day to day, giving you the chance to taste some of the world’s best coffees at one location.

  • Phil & Sebastian
    Calgary, Canada Phil & Sebastian are Phil Robertson and Sebastian Sztabzyb who met in 1996 at the University of Calgary where they were both studying engineering. They fell in love with coffee and started their own business in 2005 in Calgary, first as a coffee shop and soon after roasting. Their technical and scientific approach runs through the whole company, from their meticulous sourcing to building their own roasting machine (!) to how they brew. For this pop up they’ll be bringing two of their long-term partnership farmers and will present two tasting sessions with varieties from the two farms.
  • Tim Wendelboe
    Oslo, Norway Tim Wendelboe should need no introduction. Former World Barista and Cup Taster Champion and winner of so many awards we’ve stopped counting. Started his own roastery same time as us, and have been a great sparring partner for us throughout the years, especially on sourcing and transparency. Tim’s uncompromising approach to his whole business is an inspiration to the whole coffee community, but make no mistake: As serious he is about coffee, as fun he is to hang out with!
  • Heart Coffee
    Portland, Oregon, USA Wille and Rebekah Yli-Luoma opened Heart Coffee Roasters in 2009. Maybe it was Wille’s snowboarding background, or the fact he’s originally from the most coffee consuming country in the world: Finland – in any case, they brought a lighter roasting style to the Pacific North West. They run two coffee shops and a roastery, bringing out lots of fruit-driven coffees while obsessing over how to modify the batch brewers or increase extraction yields.
  • Switch Coffee
    Tokyo, Japan Switch Coffee is synonymous with Masahiro Onishi – or Masa as we call him. He’s one of the pioneers of the newer wave of specialty coffee in Tokyo, and did his field work with trips to Australia and Denmark before opening his own coffee shop and roaster. In true Japanese sense, he’s a master of his craft, roasting on a 12 kg Probat and brewing on his La Marzocco. Masa has great taste in music too, so we hope he’ll run the playlist during hi
  • Monogram
    Calgary, Canada Jeremy Ho, Ben Put and Justin Eyford started Monogram in 2014 with the belief that amazing coffee should inspire wonder and warmth. Since then it’s seems like a winning streak for Ben, who has won the Canadian National Barista Championship a record six times and placed in the top five at the World Barista Championship four times. They have also been allocated coffee from Finca Takesi in Bolivia where Casper and Ben recently got to hang out. We’re excited to see and taste the Monogram way of brewing with a little extra spice from Barista Hustle, who will come hang out the same day.
